Bäckeli started with two friends from Germany and one stubborn opinion: bread should taste like it did at home. No shortcuts, no extra sugar, and nothing sitting under a heat lamp since Tuesday.

Everything is mixed, proofed and baked on a daily schedule: rustic loaves, crisp rolls, flaky croissants, and the sweet pastries that belong next to a Sunday coffee. What doesn't sell fresh doesn't get sold.

Wurzel, quark multigrain and whole-grain spelt. All long-proofed and cut for the table.

Fresh rolls

Schlawiner, dark potato and pumpkin seed. Crisp first thing in the morning, just like they should be.

Savory pastries

Börek-style spirals with a creamy cheese filling. Baked crisp, eaten by hand.

Sweet pastries

Cinnamon rolls, Bamberger nut rolls and pecan braids. Buttery, never over-sweet.
